Californnia Breakfast Casserole

Serves 6 hearty sizes or 12 modest sizes
Ingredients:
  • 12 precooked (frozen) breakfast sausage patties, thawed
  • 2-3 sliced tomatoes
  • 2-3 sliced avocados
  • 12 eggs
  • 1 c. milk
  • 1 pkg. frozen hash browns, thawed
  • 1 c. cheddar cheese (shredded)
  • 1 tsp. salt
  • ½ tsp pepper
  • extra cheddar cheese for topping

Directions:
  • Layer the bottom of a greased 9x13 pan with sausage topped with tomatoes and avocado.
  • In a bowl, beat eggs and milk. Stir in all other ingredients. Pour hash and egg mixture over the sausage, tomatoes, and avocados.
  • Bake at 350 for 35-45 min or until well set. Top with extra cheddar right after pulling out of the oven so it melts all over the top. Top with salsa or sour cream.

Sausage English Muffin

Ingredients:
Serves 2

  • 2 Frozen Great Value Turkey Breakfast Sausage Patty
  • 1/4 c. Egg White
  • 1 Whole Egg
  • 1 T. 1% Milk
  • 2 T. shredded Reduced-Fat Cheddar Cheese
  • 2 Whole Wheat English Muffin


Directions:

  • Split English Muffins and Toast
  • Scramble Egg, Egg White & Milk
  • Season with Mrs. Dash Southwest Chipotle Seasoning
  • Spray skillet with Great Value Olive Oil Cooking Spray & preheat on stovetop
  • Cook Egg mixture
  • Add equal amounts of Cheese onto English Muffin bottoms
  • Top with Turkey Sausage & Egg and other English Muffin tops

Potato Basil Scramble

Servings 4

Ingredients:

  • 2 c. cubed Potatoes
  • 1/2 c. chopped Onion
  • 1/2 c. chopped Green or Red Bell Pepper
  • 1 T. Great Value Canola Oil
  • 2 c. Great Value Egg Whites
  • 2 T. minced Fresh Basil
  • 1/2 t. Salt** Mrs Dash Seasoning Blend (your choice)
  • 1/8 t. Cayenne Pepper
Directions
  • Wash and boil potatoes with skins on
  • Coat a large skillet with Great Value Olive Oil Cooking Spray
  • Put Oil into the large skillet
  • Put Onions, Peppers, and Potatoes in skillet and saute just until tender
  • Add Egg Whites, Basil, Mrs. Dash, and pepper
  • Cook and stir over low heat until eggs are completely set
Nutritional Info Per Serving (1 cup):
163 Cal., 4 g. Fat (.55 g Sat. Fat, 0 Chol., 549 mg. Sodium**, 19 g. Carbs., 14 g. Protein

**Reduce the sodium by using Mrs Dash Seasoning Blend (your choice)

 

Mini Egg & Cheese Frittatas


Servings 8

Ingredients:
  • 1/4 pound Reduced Sodium Ham cubed (divided)
  • 1 c (4 oz. ) shredded Reduce Fat Cheddar Cheese (divided)
  • 6 Whole Eggs,
  • 1 c. Great Value Egg Whites
  • 3 T. Minced Chives
  • 2 T. 1% Milk
  • 1/2 t. Mrs. Dash Seasoning Blend of your choice

Directions
  • Spray each cup of muffin tin with Great Value Olive Oil
  • Divide ham between 8 muffin cups
  • Top with cheese
  • Mix Eggs and Egg Whites with Chives, Mrs. Dash Seasoning and Mild
  • Pour equally over Ham and Cheese filling 3/4 full
  • Bake at 375 for 25 minutes or until a knife will come out clean 
  • Carefully run a knife around edges of muffins to make removing much easier
  • Remove Frittatas from muffin pan 
  • Serve Warm

Egg & Bacon Sandwiches

Serves 2

Ingredients:

  • 1 Whole Egg
  • 1/4 c. Great Value Egg Whites
  • 1 t. 1% Milk
  • 1/4 t. Mrs. Dash Seasoning Blend of Choice
  • 2 slices of Canadian Bacon ( 1/2 oz. each)**
  • 1 English Muffin 
  • 2 T. Reduce-Fat shredded Cheddar Cheese (divided)
Directions
  • Whisk together in a small mixing bowl Whole Egg, Egg White, Milk and Mrs. Dash
  • Pour into a small skillet coated with Great Value Olive Oil Cooking Spray
  • Cook until done
  • Place Canadian Bacon on a microwave safe plate and heat
  • Split English Muffin and toast in toaster
  • Sprinkle 1/2 of cheese on each half of English Muffin
  • Place 1 slice of Canadian  Bacon on top of cheese covered English Muffin
  • Divide eggs and place on top of each half of the English Muffin

179 Cals., 8 g. fat (3 g. Sat. Fat) , 223 mg Chol., 302 mg. Sodium, 14 g. Carbs., 1 g. Fiber, 12 g. Protein

**You can use a Reduced Sodium Ham Sandwich meat and lower you sodium count if needed.
