- 2 c. cubed Potatoes
- 1/2 c. chopped Onion
- 1/2 c. chopped Green or Red Bell Pepper
- 1 T. Great Value Canola Oil
- 2 c. Great Value Egg Whites
- 2 T. minced Fresh Basil
- 1/2 t. Salt** Mrs Dash Seasoning Blend (your choice)
- 1/8 t. Cayenne Pepper
Directions
- Wash and boil potatoes with skins on
- Coat a large skillet with Great Value Olive Oil Cooking Spray
- Put Oil into the large skillet
- Put Onions, Peppers, and Potatoes in skillet and saute just until tender
- Add Egg Whites, Basil, Mrs. Dash, and pepper
- Cook and stir over low heat until eggs are completely set
