Chicken Quesadillas

Ingredients:
4 Missions Carb Balance Tortillas
1 *Chicken Breast poached
1/2 Red Bell Pepper
1 Onion
1 Zucchini
3/4 c. shredded Reduced Fat Cheddar Cheese
Directions:
- Poach Chicken
- While Chicken is cooking slice Red Bell Pepper & Onion
- Cut Zucchini in chunks.
- Cube Chicken after cooked
- I use my "George Foreman Grill to prepare my Quesadillas. If you do not have one you can use a griddle on your stove top.
- Pre-cook your veggies on the grill or griddle till just getting soft. Onion will appear almost translucent.
- Put 1 tortilla on the hot grill.
- Add Chicken, Grilled Veggies and Cheese
- Place another tortilla on top of the bottom loaded one.
- Close lid on George Foreman Grill and wait.....
- Check in about 45-60 seconds. You want it to have brownish grill marks on it and also to be firm to touch.
- If you don't have a "George Foreman Grill" you will wish you did. Cause you will have to flip you loaded Quesadilla when using a griddle. But the same look of the Quesadilla is the same. Toasty and Firm.
- Take off the grill or griddle and cut into fourths.
- Enjoy!!!
