Serves 4
Ingredients:
2 boneless/skinless Chicken Breast (Market Pantry (Fresh NOT Frozen) Chicken has only 35 mg. sodium)
8 oz. dry Farfalle (bow-tie pasta)
1 T. Great Value Olive Oil
1 med. Onion, chopped
1 c. sliced Portobella or other Fresh Mushrooms
2 cloves of Garlic, minced
4 c. thinly sliced Fresh Spinach
1 t. snipped Fresh Thyme
1/8 t. Pepper
2 T. shredded Parmesan Cheese
Directions:
Poach Chicken (for directions on poaching look above at Chicken Salad
Cook Pasta according to package directions. Drain well.

- While those are cooking take a large skillet add oil and heat over a medium heat.
- Add your onions, mushrooms and garlic.
- Cook and stir occasionally for 2-3 minutes so mushrooms become tender.
- Stir in spinach, thyme and pepper
- Cook 1 minute to heat through and to slightly wilt the spinach
- Stir in cooked chicken and pasta
- Lightly toss just mix
- Sprinkle with cheese
- Enjoy!
