Chicken Quesadillas

Chicken Quesadillas
Servings 2


Missions Carb Balance Tortillas
1 *Chicken Breast poached
1/2 Red Bell Pepper
3/4 c. shredded Reduced Fat Cheddar Cheese

  • Poach Chicken
  • While Chicken is cooking slice Red Bell Pepper & Onion
  • Cut Zucchini in chunks.
  • Cube Chicken after cooked
  • I use my "George Foreman Grill to prepare my Quesadillas. If you do not have one you can use a griddle on your stove top.
  • Pre-cook your veggies on the grill or griddle till just getting soft. Onion will appear almost translucent.
  • Put 1 tortilla on the hot grill.
  • Add Chicken, Grilled Veggies and Cheese
  • Place another tortilla on top of the bottom loaded one.
  • Close lid on George Foreman Grill and wait.....
  • Check in about 45-60 seconds. You want it to have brownish grill marks on it and also to be firm to touch. 
  • If you don't have a "George Foreman Grill" you will wish you did. Cause you will have to flip you loaded Quesadilla when using a griddle. But the same look of the Quesadilla is the same. Toasty and Firm.
  • Take off the grill or griddle and cut into fourths. 
  • Enjoy!!!
