Crispy "Fried" Chicken

From Diabetes Self-Management Magazine
Serves 4

Ingredients:

4 Boneless Chicken Breasts  (4 oz. each)
2/3 c. Buttermilk
1 c. Panko (Japanese-style Bread Crumbs)
1/2 t. Ground Thyme
1/4 t. Cayenne Pepper
1/2 t. Garlic Powder
1 t. Paprika
1 t. Mrs. Dash Seasoning
1 Egg White, beaten
Great Value Olive Oil Cooking Spray

Directions:

  • Marinate Chicken in Buttermilk for 4 hours or overnight
  • Preheat oven to 425 º 
  • Mix Panko and Spices 
  • Without rinsing Chicken, dredge each piece of Chicken in the Egg White
  • Then dredge in the Panko mixture
  • Spray all sides of the Chicken with Great Value Olive Oil Cooking Spray
  • Place in a 9 x 13 pan sprayed with Great Value Olive Oil Cooking Spray
  • Bake for 30 minutes or until coating is crispy and juices run clear.
